Chinese Herbs Chicken Soup

Lately, the weather is getting colder everyday. I love drinking soup in cold weather. Chinese Herbs Chicken soup is a very nourishing soup. This is great for when you are tired and it gave you great energy as well. My Dad is a Chinese Herb Doctor. He had been a Chinese Herb doctor for more than 50 years. And I have been drinking this evers since I was a little girl. Whenever I made this, I always remembered the good old days back in VietNam when he made this soup for me. As you can see, there are many types of herbs in this soup.




Here is the whole pot.

Ingredients:
6 chicken legs or a whole chicken
A handful of Wolfberries
Bei Qi 北芪 (Astragalus Membranaceus)
Dang Shen 党参 (Codonopsis Pilosulae)
Dried longans
Hong Zao 红枣 (Red Dates)
Water
1/2 cup of Chinese rice wine
a little of Salt
a few rock sugar
Half handlful of Lotus seeds
Red Ginseng Root (Radix Ginseng Tail)
Tang Gui 当归 (Angelica Sinensis)

Method:
1. Remove the skin and excess fat from the chicken pieces.
2. Bring a pot of water to a boil.
3. Add the chicken
4. Add all the chinese herbs: wolfberries, longans and dates ect.
5. Pour in the water·
6. Add in the rice wine and salt.
7. Cover the wok and bring it to a boil.
8. Simmer over medium-high heat until the chicken is tender, about 1-2 hours.
9. Skim the fat from the broth in the casserole.
The soup is ready to be eaten. Enjoy!

Sis TrucVy, em dang bi flu co an duoc mon nay khong vay? Cho em hoi may loai herb do minh dung bao nhieu cho du ha sis?
Cam on sis recipe mon picked apple nha. Ban be em ai cung thich het.
